Saffron Pearls

Aromatic saffron pearls with golden hue and floral warmth — a luxurious touch for rice dishes and hors d’oeuvres.

Ingredients

  • ¾ cup (180mL) warm water
  • ¼ tsp saffron threads
  • ½ tsp (2g) sodium alginate
  • 1 tsp (4.5g) calcium chloride
  • 2 cups (500mL) cold water (for bath)

Instructions

  1. Infuse Saffron
    • Steep saffron threads in warm water for 15 minutes to draw out color and aroma.
  2. Blend Base
    • Blend infused water briefly to disperse saffron. Let cool to room temperature.
  3. Add Alginate
    • Sprinkle sodium alginate into liquid while blending on low for 1 minute.
  4. Rest
    • Let mixture rest 30–45 minutes to de-bubble.
  5. Strain
    • Strain through fine sieve into The Spherificator®.
  6. Prepare Bath
    • Dissolve calcium chloride in 500mL water.
  7. Form Pearls
    • Drop from 5 inches height, cure 45–60 seconds.
  8. Finish
    • Rinse gently in cold water and serve warm or chilled.
