Pumpkin Pearls

Earthy and subtly sweet, pumpkin pearls add seasonal flair to soups, pastas, and autumn desserts.

Ingredients

  • ½ cup (125mL) pumpkin purée (unsweetened)
  • ½ cup (125mL) cold water
  • 1 tbsp (15mL) maple syrup or honey (optional)
  • ½ tsp (2g) sodium alginate
  • 1 tsp (4.5g) calcium chloride
  • 2 cups (500mL) ice-cold water (for bath)

Instructions

  1. Blend Base
    • Combine pumpkin purée, water, and sweetener (if using). Blend until smooth.
  2. Add Alginate
    • With blender on low, sprinkle in sodium alginate. Blend 1 minute.
  3. Rest
    • Let sit 30–45 minutes. Strain for smooth texture.
  4. Strain
    • Push through mesh into The Spherificator®.
  5. Prepare Bath
    • Mix calcium chloride in cold water.
  6. Form Pearls
    • Drop into bath. Cure 60 seconds.
  7. Finish
    • Rinse and chill until serving.
