Ketchup Pearls

Tangy and fun, ketchup pearls offer a playful twist on a classic condiment — ideal for burgers, fries, and kids' meals.

Ingredients

  • ½ cup (125mL) smooth ketchup
  • ½ cup (125mL) cold water
  • ½ tsp (2g) sodium alginate
  • 1 tsp (4.5g) calcium chloride
  • 2 cups (500mL) cold water (for bath)

Instructions

  1. Blend Base
    • Mix ketchup with cold water in a blender.
  2. Add Alginate
    • With blender on low, slowly sprinkle in sodium alginate. Blend until smooth.
  3. Rest
    • Let sit for 30–45 minutes to eliminate bubbles.
  4. Strain
    • Strain through a fine sieve into The Spherificator®.
  5. Prepare Bath
    • Dissolve calcium chloride in 500mL water.
  6. Form Pearls
    • Drip mixture into bath and cure for 60 seconds.
  7. Finish
    • Rinse and serve immediately or refrigerate.
