Alcohol-based Pearls

Playful and potent, alcohol-based pearls turn your favorite spirits into cocktail bursts that surprise and delight with every sip.

Ingredients

  • ½ cup (125mL) your choice of spirit or liqueur (e.g., vodka, amaretto, limoncello)
  • ½ cup (125mL) cold water
  • 1 tsp (5g) sodium citrate (to stabilize high-alcohol content)
  • 1½ tsp (6g) sodium alginate (increased for alcohol)
  • 1½ tsp (6g) calcium chloride
  • 2 cups (500mL) ice-cold water (for bath)
  • Optional: ½ tbsp (7mL) simple syrup (to balance strong flavors)

Instructions

  1. Reduce Alcohol (Optional but Recommended)
    • Simmer spirit over low heat for 2–3 minutes to reduce alcohol concentration. Cool completely before blending.
  2. Blend Base
    • In blender, combine spirit, water, and sodium citrate. Add simple syrup if desired. Blend until smooth.
  3. Add Alginate
    • With blender on low speed, sprinkle in sodium alginate. Blend for 1–2 minutes until fully incorporated.
  4. Rest
    • Let sit 45 minutes to allow bubbles to settle and texture to thicken.
  5. Strain
    • Pass through fine mesh sieve into The Spherificator®.
  6. Prepare Bath
    • Dissolve calcium chloride in 500mL ice-cold water.
  7. Form Pearls
    • Using The Spherificator®, drip mixture into bath from 5 inches. Cure for 60 seconds.
  8. Finish
    • Rinse gently with cold water. Use immediately for freshest texture and flavor.
