Coca-Cola Pearls

Classic and fizzy, Coca-Cola pearls add bubbly fun to floats, desserts, and nostalgic party treats.

Ingredients

  • ½ cup (125mL) Coca-Cola (de-carbonated)
  • ½ cup (125mL) cold water
  • ½ tsp (2g) sodium alginate
  • 1½ tsp (6g) calcium chloride
  • 2 cups (500mL) cold water (for bath)

Instructions

  1. Flatten Soda
    • Let Coca-Cola sit open until no bubbles remain. Mix with water.
  2. Add Alginate
    • Blend on low while sprinkling in sodium alginate. Blend until smooth.
  3. Rest
    • Let rest 30–45 minutes. Strain if needed.
  4. Strain
    • Pass through sieve into The Spherificator®.
  5. Prepare Bath
    • Dissolve calcium chloride in cold water.
  6. Form Pearls
    • Drop from 5–6 inches height. Cure for 1 minute.
  7. Finish
    • Rinse gently. Serve with chilled treats.

  • Darker pearls: Use reduced cola or add molasses drop.
