Maple Syrup Pearls

Deeply sweet and earthy, maple syrup pearls are a gourmet garnish for breakfast classics, roasted vegetables, and cocktails.

Ingredients

  • 3 tbsp (60mL) pure maple syrup
  • ½ cup (125mL) warm water
  • 1 tbsp (15mL) lemon juice (optional to balance)
  • ½ tsp (2g) sodium alginate
  • 1 tsp (4.5g) calcium chloride
  • 2 cups (500mL) ice-cold water (for bath)

Instructions

  1. Combine Base
    • Whisk maple syrup into warm water. Add lemon juice if using.
  2. Add Alginate
    • Blend on low and add sodium alginate gradually. Blend until dissolved.
  3. Rest
    • Let sit 30–45 minutes to remove bubbles.
  4. Strain
    • Push through fine mesh sieve into The Spherificator®.
  5. Prepare Bath
    • Dissolve calcium chloride in 500mL cold water.
  6. Form Pearls
    • Drop into bath and cure for 1 minute.
  7. Finish
    • Rinse and chill. Use immediately for best flavor.
