Mango Pearls

Lush and tropical, mango pearls bring fruity elegance to desserts, cocktails, and summer salads.

Ingredients

  • ¾ cup (180mL) mango purée (from ripe mango, strained)
  • ¼ cup (60mL) cold water
  • 1 tbsp (15mL) lime juice
  • ½ tsp (2g) sodium alginate
  • 1 tsp (4.5g) calcium chloride
  • 2 cups (500mL) ice-cold water (for bath)

Instructions

  1. Make Purée
    • Blend ripe mango and strain to remove fibers. Combine with water and lime juice.
  2. Add Alginate
    • While blending on low, sprinkle in sodium alginate. Mix until fully incorporated.
  3. Rest
    • Let sit 30–45 minutes to remove trapped air.
  4. Strain
    • Pass through fine mesh into The Spherificator®.
  5. Prepare Bath
    • Dissolve calcium chloride in cold water.
  6. Form Pearls
    • Drip from 5 inches into bath. Cure for 1 minute.
  7. Finish
    • Rinse in cold water and serve chilled.
