Hot Sauce Pearls

Spicy hot sauce pearls bring heat in small, explosive bites — an exciting twist for savory snacks and bold beverages.

Ingredients

  • ½ cup (125mL) water
  • ½ tsp (3g) sodium citrate
  • ½ tsp (2g) sodium alginate
  • ½ tsp (2g) sugar
  • ¼ cup (60mL) hot sauce (e.g., Tabasco, Sriracha)
  • 1 tsp (4.5g) calcium chloride
  • 2 cups (500mL) water (for bath)

Instructions

  1. Blend Base
    • Combine 125mL water and sodium citrate in a blender. Blend for 30 seconds until dissolved.
  2. Activate Alginate
    • Mix sodium alginate and sugar, then sprinkle into liquid while blending on low speed.
  3. Add Heat
    • Slowly pour in hot sauce while blending.
  4. Rest
    • Let sit 30–45 minutes to de-bubble.
  5. Strain
    • Pass through a fine strainer into The Spherificator®.
  6. Prepare Bath
    • Dissolve calcium chloride in 500mL water.
  7. Form Pearls
    • Drip into bath from 6 inches high, cure for 1 minute.
  8. Finish
    • Rinse pearls briefly (to preserve heat) and serve.

Expert Tips

Heat Level
  • Mild: Use 2 tbsp hot sauce + 2 tbsp water.
  • Extra Kick: Add ¼ tsp cayenne while blending.
Texture Control
  • Firmer pearls: Extend bath time to 90 seconds.
  • Smaller pearls: Use rapid dripping technique.
